Our farm

Three generations on one farm in Leola.

Sherwin Weaver runs the farm his grandfather started, with his family alongside him. It is small enough that the people who raise your turkey are the same people who hand it to you across the counter.

What size should I get?

Plan about 1¼ lb per person for a whole turkey, or ¾ lb per person for a turkey breast. For smaller birds we add a pound, since they carry more bone.

Good to know

Questions we hear a lot

Are your turkeys organic?

Not certified organic, but all natural. No growth hormones, no antibiotics, no animal by-products. Our birds eat a vegetarian diet of corn and soy, raised in open-air barns right here on the farm.

Do you sell heritage turkeys?

No. We raise white turkeys, the broad-breasted kind most families cook at Thanksgiving: more white meat, a milder flavor, and a bird that roasts evenly.

What sizes do you have?

Whole turkeys from 10 to 30 pounds, in 2-pound ranges. Turkey breasts from 4 to 16 pounds. If you need a bird over 30 pounds, pick "30+" when you reserve and tell us about how big.

How big a turkey should I get?

Plan on about 1¼ pounds per person. Smaller birds carry more bone, so add a pound if you're under 14 pounds. The size guide on this page does the math for you.

Can I change my size or pickup time after I reserve?

Yes. Your confirmation email has a link to your order where you can change the size, the pickup day or time, or cancel, any time before Tuesday, Nov 24. One note: once your bird is bagged with your name on it, a size change may add a small fee.

Are the turkeys fresh or frozen?

Fresh for Thanksgiving. We process on the farm the week of pickup, chill with ice, and bag with nothing added. Frozen turkeys and parts are in the farm store all year.

Do you sell capons? What is a capon?

Yes, in season, plain or smoked. A capon is a young rooster raised the old-fashioned way for roasting. It grows bigger than a regular chicken, usually 6 to 12 pounds, with meat that is moister and more tender. Think of it as the roasting bird between a chicken and a turkey. Reserve one the same way you reserve a turkey.

Do you sell parts?

Yes. Breasts, legs, wings, necks, giblets and backs, by the pound or by the piece. Add them to your turkey reservation or pick them up at the store.

Can you spatchcock my turkey?

Yes, for a small fee. Ask at the counter when you pick up, or mention it in the notes when you reserve.

Simple roast turkey

Simple roast turkey

The no-fuss method. Dry brine the night before, roast low, rest before carving.

Ingredients

  • One Weaver's turkey, thawed if frozen
  • Kosher salt, about ½ teaspoon per pound
  • 4 tablespoons softened butter
  • Black pepper
  • Optional: a halved onion, a halved lemon, a few sprigs of thyme for the cavity

Steps

  1. The night before, pat the bird dry inside and out. Rub the salt all over the skin and inside the cavity. Set it on a rack in a pan, uncovered, in the fridge overnight.
  2. Take the turkey out an hour before roasting. Heat the oven to 325°F. Rub the softened butter over the skin and grind pepper over the top. Tuck the onion, lemon and thyme in the cavity if you're using them.
  3. Roast breast side up, uncovered, about 13 minutes per pound. Check the thickest part of the thigh with a thermometer: you're done at 165°F. If the skin gets dark before the bird is done, tent it loosely with foil.
  4. Rest it on the cutting board for 20 to 30 minutes before carving. The juices settle and the meat stays moist.
